Eating the Globe: Madagascar


Cooking these international meals is quite fun.

This is Madagascar chicken. I used this recipe. It's chicken marinated in lemon juice, onion, garlic, bell pepper, coconut milk, cayenne pepper, lemon zest, and ginger. The lemon marinade essentially started the cooking process of the chicken, like ceviche. Because of the blandness of the last meal (Finnish macaroni casserole), I added extra cayenne pepper.

Since I had more than half a can of coconut milk left over, I thought I'd make rice with it. I got the proportions all wrong and it took forever for the rice to cook. Plus, because the rice took so long to cook, the chicken that was just sitting in the pan was overcooked.
